☕ Coffee of the Week is here, and it’s a warm, welcoming Mexican classic.

Chiapas HG EP Fair Trade Organic comes from smallholders in the El Triunfo Biosphere Reserve in Ángel Albino Corzo. Exportadora de Granos Mexicanos works side by side with producers, pairing field training with specialty coffee alliances so farming and processing keep getting better.

This kind of Mexican lot is getting harder to find as demand at home soars.

In the cup: sweet aroma, mild winey notes, cocoa, caramel, and dried fruit. Medium round body, pleasant smooth aftertaste. Full and comforting in a French press, sweet and structured as an Americano, and a natural for espresso where mild acidity meets dark-chocolate depth. High grown. European prep. Washed. 1,200m up on the Campos Altos plateau in Cerrado Mineiro.

This pulped-natural Red Catuai from Bioma Café — grown by Marcelo Nogueira Assis and Flávio Márcio Silva — comes from cherries that ripen slowly through defined seasons. Cover crops, on-farm compost (now most of their soil nutrition), and large stretches of preserved native vegetation keep the biome working with the coffee, not against it.

Skin off, mucilage on. Clarity over volume.In the cup: caramel and cocoa, roasted nuts and hazelnut, a thin line of dried fruit and soft citrus. Medium body. Even structure. A finish that stays sweet.It holds across espresso, drip, and French press. Hot or iced.
