When we say “community pillar”, we don’t use those words lightly. Hong Shing has been doing the damn thing for nearly 30 years, and anyone who’s enjoyed their Ma La Wings knows how flavourful that dish is. This is classic meets new school; imagine an au poivre sauce, but with Szechuan peppercorns for a rich taste that lingers. Pair that with some crunchy pickled veg, some fresh garnish, and a healthy dusting of Ginger Scallion seasoning on our beef tallow fries and you’ve got yourself one heck of a combo.
