Cannelé is a small French pastry from Bordeaux, known for its thin, caramelized crust and soft, custard-like center, typically flavored with rum and vanilla. It’s minimal, elegant, and notoriously difficult to perfect.

At Castle & Coal, we’ve gone through extensive trial and error to achieve that delicate balance - an even, crisp crust with a tender interior that allows the flavors to shine.

We don’t offer additional flavors or toppings for our cannelés. Instead, we take pride in showcasing their simplicity and in perfecting this classic, deceptively challenging French pastry in its purest form.

Learn how to make and bake one of the hardest French pastry. From start to finish, we will be demonstrating how we intricately make our cannelés at Castle & Coal.

The workshop will take 2 hours and will include 1 unseasoned tin lined copper mould (worth $55), a block of beeswax, recipes, full demonstration of making cannelés, making a batch of your own to take home, tips and tricks of what to do at home when making/ baking.

FAQ: Can I just go to the workshop and not include the mould?
All workshops include all of the above, no price modifications.

It’s Valentine’s Day in a couple days and we wanted to share this moment from December 🥹.

Raval reached out to us saying he wanted to propose at Castle & Coal during a private workshop. They hold our shop near and dear since they started visiting Castle & Coal during the beginning of their relationship. We are so honoured to have been part of such a meaningful moment and it was sooo much fun helping Raval plan his special evening 🥹

Chocolate Kouign Amann Valentines Special ❤️

Our Chocolate KA is made with Valrhona cocoa powder, filled with Valrhona dark chocolate ganache, and garnished with cocoa nibs, turbinado sgar, and Fleur de Sel.

Just like our Aaron’s Cake, this will be limited and it’s best to order ahead.

We made a slight error on dates. Orders will be live February 2, 8pm, not February 1 🫣

Aaron’s Chocolate Cake Valentine Special ❤️

What a great way to show your loved one you love them by giving them Aaron’s Chocolate Cake.

Layers of devils food cake, Valrhona dark chocolate mousse (of course, 70% cacao), glaçage, a little cocoa nib for bitterness, and a side of raspberry coulis.

The best thing about this cake in our opinion is the mousse, we use a custard based mousse (no raw whites), which makes the end product really soft and smooth… no gelatin added 👌🏼

Aaron’s Chocolate Cake will be one of the specials we will be serving Valentine’s Day weekend. Other specials will be posted this upcoming week and Valentine’s Day pre-orders will be live on our site February 1, 8pm and it will close February 10, 8pm.

Please note: we will have enough for orders, but walk-ins are very limited. If you are walking in that weekend, it is first come first serve. No reservations through DMs and phone orders since it does get really confusing and complicated on our end.
