Heat wave dinner! Mister Butcher’s famous 🦀crab cakes 🦀.

These crab cakes are made with fresh rock crab 🦀 and shrimp 🍤. Great seasoning. Not a lot of filler.

Pan fry for 3-4 min a side, or pop into the air fryer. Pair with a salad and dinner is done!

Hello Mister Butcher family, it’s been a minute since we’ve been on here but we’re back! Sharing our Sunday night, dinner, using our frenched pork chops.

I’m often hesitant to cook pork chops because I almost always dry them out, but I find these pork chops stay very juicy. They’re about an inch and a quarter thick with a frenched bone (which looks fancy but also keeps the pork from drying out on the grill). Tonight‘s recipe was from the mustard cookbook highly recommended!!

Ever wonder why you can safely eat a steak that’s rare, but you have to cook ground beef to a temp of 160F?

Bacteria in raw meat is typically on the surface, and the solid structure of a steak acts as a natural barrier.

The inside of a steak has never been touched - any bacteria that is present on the surface of the steak is destroyed by grilling.

The grinding process in making ground beef exposes more surface area and mixes bacteria throughout the meat, which is why it’s so important to cook to a temp of 160C.

You also need to be very careful with any steaks that have been mechanically tenderized. This is essentially punching small holes in the steak with a blade. This helps the meat break down and is typically done to break down the tissue, and is used with lower quality beef (or un-aged beef). That is why you will see a warning on the label to make sure you cook the beef to a well done temperature.

Mechanically tenderizing also compromises the structural integrity of the steak, which can create a less than ideal cooking & eating experience.
