Our cows are much bigger than average. Our 1/4 cows are often around 225lbs, which will give you around 110-150lbs of packaged beef depending on how you get it cut.

Let’s do the math.

26 lbs of beef per person per year.
Family of 4 = 104 lbs of beef. (Our family eats much more)

Grocery store beef:
Grocery beef loses ~25% when cooked because it is wet aged.
104 ÷ 0.75 = 139 lbs of uncooked grocery store beef
Grocery store Ground: $8–10, Roasts: $14–18, Steaks: $20–30, Average across all cuts: $17/lb.
139 lbs/year x $17/lb = $2,363/year

Our quarter cow:
225 lbs hanging = ~130 lbs packaged beef
Our beef loses ~15% when cooked because it is dry aged. 130 lbs × 0.85 = 110 lbs of cooked beef
225 lbs hanging × $9.02/lb = $2,029.50

About $330 less for grass fed beef, vac packed, and delivered directly from our farm

Let’s do the math:

80lbs beef ÷ 0.65 = approx. 123lbs hanging weight
$1,275 ÷ 123lbs hanging weight = $10.37/lb USD
$10.37 USD x 1.37 = $14.21 CAD per pound hanging weight.
