In the early 2000s, Mamma Rita and her husband, Vince, would make ravioli at home for Terroni Balmoral. When Adelaide Street opened in 2007, Vince would come in each week to make sausages using his family recipe, the same one we still use today. When he passed, Rita carried on the tradition herself.
These days, she bakes the biscotti for Bar Centrale, which the morning crowd never lets stay in stock for long. And while she may leave the sausage-making to us now, she still pops into the kitchen for a little quality control.
Today is Mamma Rita’s birthday, and we’re celebrating someone whose hands, recipes and traditions have been part of Terroni since the beginning.
