Decisions, decisions. You’re standing looking at a wall of steaks. There are so many options. At Signature Steer we have a few favourites. Below are descriptions of the cuts. We’re aiming to lend a helping hand and make your decision making easier.

TENDERLOIN
Extremely tender with a buttery texture. Low in fat, these steaks have a light flavour. Tenderloins are often wrapped in bacon to add more flavour.
STRIPLOIN
Moderately tender with a bit of chew. Good marbling and a strong beefy flavor. A favorite of steakhouses.
RIBEYE
Highly marbled. The higher fat content makes ribeye one of the richest, beefiest cuts available. After searing, finish at a lower temperature for optimal texture and flavour.
COWBOY
A thick, bone-in ribeye. See notes above. Cooking bone-in creates a more flavourful steak. A little longer to prepare but totally worth the wait.

A few easy cooking tips:
• Always cook a room temperature steak. Don’t go from fridge to pan/bbq.
• Let your steak rest for a minimum of 5 min after cooking (longer for large steaks) and put a pat of butter on the steak while it’s resting.
