Carrot Cake Cupcakes with Candied Pecans
These are not to be confused with my previously posted, less sugar carrot pecan muffins. These are the real deal, classics we all know and love.
To get moist and flavorful cupcakes I like to use vanilla flavoured yogourt. It’s a tried and true trick that has never let me down.
When making any icing ALWAYS ALWAYS make sure your icing sugar is fresh! You will taste stale sugar no matter what you do.
Candied Pecans were added to the final product to round out the rich buttery flavour in the icing and to dress up a classic.

Lemon Poppy Seed Muffins
Lemon is a universally loved flavour and one of my favorites!
Most recipes call for fresh squeezed lemon juice but don't let that deter you if all you have is juice from concentrate, it'll be just as delicious!
To get a real punch on your lemon flavour you can add a touch of lemon extract.
Careful with the poppy seeds as you don’t want to add too much. Add too much and it’ll be a seedy mess when you try to enjoy them afterwards.
To get moist muffins every time, try switching up your milk to either sour cream or yogourt. ⁣⁣⁣⁣

Sandwich Bread
The first thing you think of when you first go gluten free is “OMG no bread!?!?” and finding a good store bought one is rare. So, with that I decided to make my own.
I won’t pretend that gluten free bread is easy to make, without the gluten it's hard to get a fluffy, moist and well structured final product, it's really all just trial and error.
I have tried a LOT of recipes in my quest for a good sandwich bread…. With a LOT of flops!
I finally found this recipe that combines gluten free flour with oat flour, psyllium husk powder, powdered milk and tapioca starch and it was the closest I’ve come to the bread I’m looking for.
Gluten free bread has a very short shelf life, so if you don’t intend to use the whole loaf within 48 hours I would suggest pre-slicing and freezing half the loaf right after it has cooled. ⁣⁣⁣⁣

Say Hello to our Fudgy Coconut Brownies
These Super Fudgy Coconut Brownies are not for the faint of heart! With their dark chocolate ganache top, coconut butter cream centre and a rich fudgy brownie bottom they’re one of the richest things I make!
For super chocolatey fudgy brownies, I always allow my cocoa to bloom for a bit in my hot coffee before adding it to the rest of the ingredients and make sure to take it out of the oven while the centre is still a bit jiggly… a controlled jiggle not a fluid one.
Along with sweetened coconut in the butter cream, I also added coconut extract for an extra kick of flavour I was looking for. To really accentuate the coconut flavour I added almond extract to the brownie base.
The ganache topping adds the perfect finishing touch!
If You find the idea of ganache intimidating DON”T! Absolutely anyone can make ganache!
It’s only 2 ingredients, warm heavy cream & chocolate… that’s it, that’s all!

Pistachio Baklava Rolls
These were created to satisfy my craving for Baklava AND help me to avoid making phyllo pastry! I combined a tried and true Cinnamon Roll recipe with the traditional filling of Baklava and P**F! Craving satisfied and a new favourite 😋
Like any Ol'Cinnamon Roll, you don't want your dough to be too thin before rolling up your filling
as you'll run the risk of tearing and making a frustrating mess.
Just like the traditional Baklava, a sweet, sticky honey lemon glaze is poured over the rolls fresh
out of the oven.
I find a clean swift chop with a lightly floured knife is best when cutting your dough into individual rolls.
The secret to the FLUFFIEST rolls is to be gentle with your yeast by not overheating it and to
allow your yeast a good slow rise.⁣⁣⁣

Our Feature Today is Almond Flour Carrot Pecan Muffins
This recipe can be made vegan with just a simple substitution of the eggs for flax eggs
Most muffins are PACKED with sugar (not that I'm complaining 😉) but these delicious muffins contain very minimal sugar, getting most of their sweetness from applesauce and honey
These muffins are loaded with both fruits and vegetables making them so much more satisfying than your average muffin. They make a great breakfast on the go!
Walnuts are usually paired with carrot muffins but I find pecans to have a sweet buttery flavour where walnuts tend to be slightly tangy and sharp ⁣ ⁣ ⁣ ⁣ ⁣ ⁣

Today is all about No-Bake Chocolate Macaroons ❤️
These iconic cookies, that nearly all of us enjoyed when we were younger, goes by many names… Drop cookie, Haystacks, Macaroons (not to be confused with Macarons) just to name a few, but no matter the title they’re always delicious and always bring you right back to being a kid.
The ingredients to these classics are usually the same with some preferring coconut in the mix while others choose to cut that out. I prefer an equal blend of oats and coconut. ⁣⁣⁣⁣

Delicious Jam Filled Donut muffins.
Don’t let the title and appearance fool you, this is an ol’fashion donut batter baked in a muffin tin. These are best when served warm and fresh out of the oven, and taste EXACTLY like the old fashioned donut holes you get at the fair!
The Jam in the centre adds a sweet surprise to these already delicious “muffins” and can be any flavour of jam you want!
For an added touch sprinkle some coarse sugar on top before baking for a sticky crunch topping.⁣⁣⁣⁣⁣
