Our Mutancana — Ottoman-style sweet and sour lamb stew — is on the menu this weekend, and tonight is your last opportunity to order it until next Friday.

This is a dish with a six-hundred-year history. Lamb braised low and slow with dried apricots, figs, prunes, honey, pomegranate balsamic vinegar, cinnamon and sumac — finished with toasted almonds and pomegranate seeds. A recipe from the 15th-century Ottoman palace kitchen, made by Chef Tolga from a tradition that has survived empires.

Pair it with a glass of Niagara Cab Merlot or Gamay. The herbal notes and red fruit were made for this dish.

In the midst of all the damage and devastation caused by the recent floods there are examples of generosity that deserve recognition. I'd like to give a shout-out to Tolga Baykala, owner of Lokanta Mediterranean in Port Dalhousie. When he heard about the residents evacuated from their homes on Canal Street due to the retaining wall collapse in their back yards above Dalhousie House he wanted to help in some way. Being an amazing chef he made dinners for each family and I delivered them tonight. The residents were very thankful and Tolga said it was just a small gesture to show that he cares from "their neighbour down below". He did this while his family is still cleaning up from their own house being flooded twice. Acts of kindness in a crisis like this remind us what makes Port Dalhousie such a special place.

Today, our chef, our co-founder, our leader, and one of the most extraordinary human beings we know turns 43.

Tolga Bakayla came into this world carrying something rare — a culinary heritage that survived genocide, displacement, and centuries of hardship, passed down through the hands of mothers and grandmothers who refused to let it disappear. He carries it still. Into every dish. Every recipe. Every meal he sets on your table.

He is a son. A husband. A father. A Circassian man who crossed an ocean to build something new without letting go of what came before.

He lost his father. He married his best friend. He raised a boy named Çinar who is growing up knowing exactly where he comes from. And somehow, in the middle of all of that living, he found his way to Port Dalhousie — and made it feel like home.

We are so honoured to serve beside you, Tolga. To build this with you. To watch Port Dalhousie fall in love with your food the way we knew they would.

Someone recently asked one of our team members why we have a train table for kids in the restaurant.

Our server said: “We’re a family restaurant. Everyone is welcome here.”

The guest asked what that meant.

“That means everyone is welcome. Everyone. Parents, kids, everyone.”

We don’t always get to choose the moments that define us. Sometimes they just happen, quietly, on a Tuesday afternoon, when someone on your team says exactly the right thing without hesitation.
