Prepping today's noodles! Some of you have been curious about and even frustratedby the fact that we have sold out the last couple of days. As we are just a pop up at the moment, we are severely limited by the equipment available. We will likely continue to sell out as we are not willing to make sacrifices on quality to pump out more quantity. Pop-ups are challenging, and a big part of that is working with the equipment you've got. Without an oven to roast our pork chashu, we developed a recipe using the barbecue instead! After the grill we add our house marinade and sous vide for 12 hours for some super juicy and flavourful chashu 👌
