A lot happens behind the scenes before seafood reaches the plate.

Recently, our apron team stepped away from the kitchen and visited Intercity Packers Meat & Seafood to learn more about the people and process behind the seafood we proudly serve. We spent time with their team learning about their work, the care that goes into preparing our seafood, and the relationship they’ve built with our kitchen.

Since 1972, Intercity Packers Meat & Seafood has been sourcing, preparing, and supplying high-quality meat and seafood across Canada. When we asked what most people don’t realise happens behind the scenes, they shared that some “Just In Time” orders are prepared in the early hours of the morning. A salmon can be custom-cut at 4AM, delivered by 10AM, and cooked and plated for lunch service that same day.

We also asked what they’re especially excited about right now. Their answer: Wild Pacific halibut, which is currently in the heart of its fresh season and processed into fresh fillets and portions daily. We loved getting a closer look at the care that goes into an ingredient we work with every day, and learning more about the people behind it.

Our relationship with our suppliers is an important part of what we do at the apron. Knowing the people behind our ingredients gives us an even greater appreciation for what makes it onto our guests’ plates. ✨

We're still thinking about

We were thrilled to have the apron team join this year’s event, sharing a taste of our West Coast-inspired approach to dining alongside an incredible lineup of chefs and producers from across the region.

A big thank you to everyone who stopped by, shared a plate and raised a glass with us. And of course, to Chef .kitchan for bringing the passion and great hospitality to the table.
