When selecting ingredients, we constantly work with several suppliers. We prefer to work with small businesses. However, over the year we have run against barriers.
Using fresh produce, we look for quality, freshness, and size. With seafood, we cannot sacrifice quality, as sushi grade is among the top.
By following the supply chain, through which these ingredients pass through, we choose to have fewer hands that these items pass through.

The most common barrier is available supply. Once we have selected an ingredient, does not always mean it is in season or that harvest was large enough to meet demand. Sometimes this has an immediate supply shortage , while others supply may not be affected for months.

As we work with our suppliers, we try to limit how this impacts you our valued customer. Sometimes though, we have no option but to temporarily make the roll or rolls unavailable. If for any reason should this impact the cost to you, we will inform you.

We appreciate all the support you have given us, and look forward to serving you again. Thank you!
