We know that coffee is about so much more than your morning cup.

It’s about the people, the families, the communities and the land behind every single bean. It’s about generations of knowledge, early mornings on the farm, hands that carefully pick each coffee cherry, and all the work that happens long before those beans ever reach a roastery.

For us, coffee is personal. Our connection begins at the farm, with our family who grows it and the land that gives it life. From planting and harvesting to processing, roasting and finally brewing, every step matters. Every decision along the way has an impact on the people who depend on coffee for their livelihoods and on the quality and flavour that eventually ends up in your cup.

And at the end of the day, all of those things come together for one simple purpose: making sure the coffee you drink is the very best it can possibly be.

Because a great cup of coffee should taste incredible, but knowing the people, passion and purpose behind it makes it mean a little more, too.

Trigger warning for the dark roast lovers 👀☕️

We’re not saying dark roast is bad, but here’s a little coffee secret: the darker you roast, the easier it is to hide old beans, lower-quality coffee and defects.

That’s why many specialty coffee roasters don’t take their coffee nearly as dark as the big chains. When you start with great coffee, you don’t need to hide it.

We have a dark roast at Chalo’s too, but a level of dark that still allows you to taste the natural properties of the coffee.

Because as Chalo says in the video: roast too dark, and you burn away the beautiful flavours you could be tasting.

At the end of the day, coffee is personal- drink what you love! We’ll just keep sharing what we know so you can get the best possible flavour out of every cup. ☕️

One breath. When Chalo closes his eyes and breathes in, he’s home — on the farm where it all begins. Our family plants, harvests, and processes and exports the coffee. Our team here in Pickering roasts and packages it, then brings it to you. No middlemen. Just one incredibly direct journey from our farm to the cup in your hands.

At 90 years old, Chalo’s grandmother, Doña Francisca, is still very much part of everything that happens on our farm in Huila. We always say she’s the one running the show.

For her, the farm has always been about much more than coffee. It’s the livestock, the land, the trees, the crops and everything that comes with life in the countryside. She understands how it all works together because she’s spent a lifetime living and working on this land, watching it change and learning from it along the way.

We’re incredibly lucky to still have her wisdom- and her watchful eye- on the farm today. ❤️
