Beyond a Restaurant

I’ve been in the food service industry for over 20 years, including owning a catering company in Japan.

Looking back, what I’ve enjoyed the most has never been just the food. It has always been about building relationships.

Over the years, I’ve been blessed to build genuine friendships with so many of my customers. Through those experiences, I often found myself wondering if one day I could spend a couple of hours serving guests personally across the counter—not simply serving food or pouring drinks, but sharing conversation, stories, and creating meaningful memories together.

I used to tell people that maybe after I retired, I would build a small kitchen or bar and do it as a hobby.

I never imagined it would happen this soon.

Because of the challenges this summer, especially being short-staffed, we naturally evolved into offering our Sake Experience and Omakase course. To my surprise, I realized this is exactly what I had dreamed about.

Recently, I had the honor of serving a dear family who has been with us since the very beginning of our journey in Canada. Watching them enjoy the experience reminded me why I started this business in the first place. Their friend even created this beautiful video for us, and I feel incredibly humbled and grateful.

I can't thank our community enough. They led me to discover something I thought I wouldn't experience until much later in life.

This is beyond a restaurant.

It's about connection.
It's about relationships.
It's about creating memories that last far longer than the meal itself.

And I truly love it.

I'm looking forward to enjoying this journey even more.

レストランを超えた場所

私は20年以上、飲食業界に携わってきました。日本ではケータリング会社も経営していました。

振り返ってみると、一番楽しかったのは料理そのものではありませんでした。私にとって一番大切だったのは、いつも「人との関係を築くこと」でした。

これまで本当に多くのお客様と、心からの信頼関係や友情を築くことができました。その中で、いつかカウンター越しにお客様と数時間ゆっくり向き合いながら料理をお出ししたいと思うようになりました。ただ料理やお酒を提供するのではなく、会話をし、人生を分かち合い、一緒に思い出を作るような時間です。

私はよく、「引退したら小さなキッチンかバーを作って、趣味としてやってみたい」と話していました。

それが、こんなにも早く実現するとは思ってもいませんでした。

この夏、人手不足という大きな試練がありました。しかし、その流れの中で自然と日本酒ペアリングやおまかせコースが生まれました。そして気付いたのです。これこそが、私がずっと心の中で描いていたことだったのだと。

先日、カナダでお店を始めた頃から応援してくださっている大切なご家族をおもてなしする機会がありました。その時間を楽しんでくださる姿を見て、「自分は何のためにこの仕事を始めたのか」を改めて思い出しました。さらに、ご友人がこんなにも素敵な動画まで作ってくださり、本当に感謝の気持ちでいっぱいです。

地域の皆さんには感謝してもしきれません。もっとずっと先の人生で味わうと思っていた喜びを、今こうして経験させていただいています。

これは、もう単なるレストランではありません。

人と人とのつながりであり、
信頼関係を築く場所であり、
食事が終わった後も心に残り続ける思い出をつくる場所です。

私は、この時間が本当に大好きです。

これからも、この旅をもっともっと楽しんでいきたいと思います。

A Blessing to Grow Another Year Older

I never really liked birthdays, but this year feels different.

Over the past couple of years, I’ve been thinking about why I’ve grown so much. One of the biggest reasons is that I’ve found true freedom.

For so many years, I lived with the wrong mindset. I believed I wasn’t good enough. I thought I wasn’t there yet. I compared myself with other successful people and always felt like I wasn’t enough.

But God has been changing my heart.

I’ve learned to stop comparing myself with others and instead focus on what God has given me—the unique gifts, calling, and passion He has placed inside me.

Today, I feel incredibly rich. Not just materially, but spiritually and emotionally. God has blessed me with a rich life, and for that I am deeply grateful.

Thank You, God, for giving me this wonderful life.

For the rest of my life, I simply want to serve You and do what You have called me to do.

I look forward to the future with excitement, trusting in Your promises and following wherever You lead.

One month into our KIZUNA Sake Pairing Experience, and we are so grateful.

Guests keep telling us, “This is not just food and drinks — it’s an experience.”

That is exactly what we hoped to create: a place to discover sake, enjoy Japanese food, share stories, and connect across the counter.

For us, this is more than selling food or sake. It is about building relationships and creating memories with our community.
