Davison's Maple Syrup and Pancake House The Davison family has made maple syrup here on our farm for over 110 years. Here, conditions are ideal for sap collection and syrup production.

Although we now use more modern sap collection techniques (pipelines instead of buckets!), we still produce pure maple products the old-fashioned way here at the camp. Since opening our Pancake House in 1995, we’ve shared our enthusiasm for ‘Sugar Season’ with thousands of guests throughout the region and across the world during these six special weeks each year. Davison’s is one of many excellent

maple producers in the Cobequid Mountains in Cumberland County. A full 70% of Nova Scotia’s maple syrup comes from Cumberland County. We take bookings, but only for large groups on the weekday, on the weekends customers are served on a first-come first-served basis.

We are finally done boiling! We shut down the evaporator for the last time of the 2026 season last night. It was a very short season for us this year. The sap started flowing late this year with the main bulk of our syrup coming between March 9th and Apr 8th. The last few weeks were far too warm with not enough cold nights to have large runs.

Despite this we still managed to have a record season! This is mostly due to the high sugar content this year and the excellent work of our woods crew in keeping a tight vacuum in the woods. This is our last weekend for the pancake house for the season. Friday April 24th, 2026 we will be open 4pm-7pm, Saturday and Sunday April 25th and 26th,2026 we are open 8am till 7pm. Reservations are highly recommended to ensure you have a table.

The shop for products will remain open all year please call ahead. We'd like to thank all of you for your overwhelming support and hope to see you next year❤

The season continues for now, but without a cold night soon, the end is getting close.
The syrup has darkened, and we’re starting into end of season production. We likely have about a week of boiling left, but our restaurant will stay open until April 26th.

Hello everyone, thanks so much for all your support! Our Easter hours for the pancake house are Good Friday April 3rd,2026 from 8am-7pm and Saturday April 4th, 2026 8am-7pm and CLOSED for Easter Sunday and Monday. Reservations are highly recommended. Our regular hours will resume the following weekend until April 26th,2026 . Happy Easter 🐣🐰

Wow, we finally caught up.
We just boiled the last of the sap that flowed in overnight. After a run like that, it feels good to be caught up again, at least for the moment.
It’s looking like it will warm up again this weekend, so we’ll likely be right back at it soon!

Wow now that's a sap run. 32,000 gallons and still comeing in strong! The RO has been running for 30 hours straight and every tank we have is still full to the top! This cold weather tonight should hopefully give us a chance to catch up.
