This afternoon's project.

I saw a video of a c***r based vermouth with some interesting aromatics the other day. I thought it sounded like a great idea to explore. Ive been all over wild chamomile for the last month. Its everywhere at the farm. So i collected some. A few complimentary aromatics. And got to work on this fermentation with some c***r and vodka as the alcohols. We'll check it out next week some time

As tomatoes start ripening on the vine, its time to start thinking about all the amazing dishes to be made with them.
Here we have a tomato agua chile. A simple tomato and chili water sauce. The remaining pulp dried out to an intense tomato powder. Beautiful esrly season cherry tomatoes. Cotija cheese. And some red chili for extra heat.
Amazing first course on a hot day.

Busy week with one more service to go. An intimate wedding reception tonight. A few dishes from last nights anniversary celebration. Absolutely adore the charred leek dish.

Over the moon happy with how my bowl/plate came out the kiln. The glaze and shape are perfect for our standing reception small plates parties. I have 4. Haha! Now to make 46 more!
