Blue corn tortillas on the comal, meat on the plancha, and a woman who’s been doing this longer than most of us have been cooking. This is Mexico.

No measuring. No hesitation. Just repetition built into muscle memory. Crema over chorizo and carnitas, greens piled on.

Sauce ladled on expertly. Every order gets the same attention.

Watch the hands.

Tostadas, two ways. Both with shrimp, but both very different from each other.

Cold, bright, acidic. Aguachile de camarón, shrimp cured in lime and chile, nothing in between us and the ocean.

The colour, the texture, the flavour. Every time we’re touring Mexico we’re reminded by how simplicity is always, always the best.

Mexico City. Street level. This is what R&D looks like when you do it right. A street vendor in Mexico City finishing off a plate of chilaquiles; tortillas, salsa, and a generous blanket of cheese going over the top. This is breakfast.

Mexico City’s markets are their own education; ingredients you’ve never seen, sold by people who’ve known them their whole lives.

Charred black in some spots, golden in others. Eaten standing on the sidewalk. No napkins, no fuss.

No sign. No reservation. No tables. Just a flat iron, fresh tortillas, and someone who’s been at it since 5am. Eat standing, leave satisfied. Mexico City has a thousand of these.

Top: chorizo con papa. Crispy potato, red chorizo, charred jalapeño, caramelized onion. Bottom: bistec con cebolla. Grilled beef, white onion, blackened on the comal.

These masks are deeply rooted spiritual, cultural, and artistic symbols used to transform identity, honor ancestors, and tell stories.

Fresh fruit, cut up right in-front of you. Always taking advantage of what’s seasonal and what’s fresh!

The world is small when you’re a cook. Chef Eddy linked up with a chef he’d met in Ireland; ends up he was in Mexico City at the same time. So naturally, they explored together. Bellas Artes by night, the city as the backdrop.

Tenampa. Papel picado on the ceiling, mariachi in the room, tequila on the table. One of the oldest cantinas in Mexico City.

Mariscos Chinos Chalino. Whole shrimp, dark broth, avocado, fresh herbs. This is what Coyoacán tastes like.

Tostada de carnitas. Tostada de pulpo. Crispy base, fresh pico, avocado, and whatever they pile on top that day. Coyoacán market.

Shredded chicken, rice, red onion, chile de árbol on the side. Caldos Gallina Luis, a bowl that’s been fixing people since before most restaurants in this city existed.

One can never have enough tacos.

Guadalajara, Jalisco. Mexico’s second city; the birthplace of mariachi, tequila, and some of the most important cooking happening in the country right now.

Julio and Chef Eddy made the trip as part of an ongoing R&D journey through Mexico; eating through cities, visiting distilleries, sitting down with the people who’ve dedicated their lives to this culture. All of it in service of understanding Mexican food and drink at a deeper level and bringing it back to Por Vida.

Guadalajara. Mexico’s second city. We came to eat.

Simplicity is key. Nothing can beat freshness.

Every bottle on those shelves has a story. The agave program is serious.

Lots of research and development.

Everything done with intention.

Lots of ideas to bring to Por Vida!

The town of Tequila, Jalisco during Independencia week is something else entirely.

Red, white, and green as far as you can see. Cobblestone streets. The smell of cooked agave in the air.

Chef Eddy and Julio spent the day at La Rojeña, the oldest tequila distillery in Latin America Est. 1758. Piñas by the thousands. Organic barrels stacked to the ceiling. Four pours, one tasting mat, and a plate of coffee beans, cinnamon, and cajeta to reset the palate between each one.

This is the education.

🌵 Jose Cuervo USA · Tequila, Jalisco

La Rojeña, Jose Cuervo USA distillery. Est. 1758. They’ve been doing this longer than Canada has been a country!

Hundreds of harvested agave piñas waiting to go into the ovens. Each one took 7–10 years to grow.

Rows and rows of oak barrels aging organic tequila. The patience required to do this at this volume is genuinely humbling.

Before the pour, the palate reset.
Coffee beans. Cinnamon. Lime. Cajeta. Each one designed to cleanse and prepare for the next expression. This is how you taste tequila properly.

Plata → Reposado → Cristalino → Añejo

Four expressions. Four completely different stories from the same agave.

The research is hard work. Someone’s gotta do it.

The road through Mexico continues. More stops, more kitchens, more people who’ve dedicated their lives to this craft. Stay close!
