I THOUGHT MAKING SAUSAGE WOULD BE EASY… UNTIL CULINARY SCHOOL MADE ME MAKE IT FROM SCRATCH! 😂🌭👩🏾🍳
Throwback to one of our culinary school practicals where we were divided into groups to make pork sausage completely from scratch.
And I mean EVERYTHING! We prepared and ground the pork, seasoned and mixed the meat, prepared a real natural casing (intestine), then used the sausage stuffer to fill and link our sausages.
As a beginner, this was definitely a learning experience! 😅
One of my biggest challenges was temperature control. You’ll notice all that ICE we were using.That was very intentional. The meat, equipment and mixture needed to stay cold during grinding and mixing. If the fat gets too warm, it can affect the texture of the finished sausage.
Then came the natural casing! 😂
Handling an actual intestine for the first time was an experience on its own. We had to rinse and prepare it properly, then carefully fill it without making it too tight or too loose.
Too much pressure? The casing could burst!
Too little? Uneven sausage!
And we still had to get those links right.
There was so much to think about at once, temperature, texture, seasoning, grinding, stuffing, linking and food safety.
But that’s what I loved about culinary school. I wasn’t expected to know everything. I was there to learn.
I made mistakes, asked questions, learned from my instructors and classmates, and became more confident with every practical.
This wasn’t just about making sausage. It was about understanding the WHY behind every step.
Whole pork → trim → grind → season & mix → keep it cold → prepare casing → stuff → link → sausage!
