How We Do Things: What Happens Before We Open?

When guests arrive at New Glasgow Lobster Suppers at 4:00 p.m., the dining room is spotless, the rolls are warm, the chowder is simmering, and the pies are ready to serve.

What many don't see is that the work started hours earlier.

Every morning, our bakers, prep cook, and cleaners arrive to begin preparing for what can be one of the busiest four-hour dinner services anywhere on Prince Edward Island.

During peak season, we can serve 600 to 700 guests in a single evening. To make that happen, nearly everything is prepared fresh from scratch each day.

The Morning Crew

Our prep cook starts by preparing:

165 litres of Seafood Chowder
60 litres of Soup
Eggs and Homemade mayonnaise for our fresh potato salad
Fresh vegetables and ingredients that must be peeled, chopped, cooked, and prepared daily

Then there's the baking.

In the high season every day our bakers produce:

35 Mile High Lemon Meringue Pies- countless egg whites seperated by hand go into the Meringue!
24 Coconut Cream Pies, 16 Fruit Pies
All pastry made from scratch
Strawberry Shortcakes, Chocolate Cakes plus our Gluten free goodies!

And then there are the rolls.

Each day, approximately 1,400 dinner rolls are mixed, shaped, proofed, and left to rise. The dough rises throughout the day, and baked continuously throughout the evening so guests can enjoy warm rolls right from the oven.

The Afternoon Kitchen Crew

Around 1:00 p.m., our line cooks and kitchen staff arrive and shift the preparation into high gear.

Their afternoon includes:

Preparing scalloped potatoes
Cutting fresh broccoli, carrots, onions, mushrooms, and peppers
Slicing the roast ham that has been slowly cooking all morning
Seasoning steaks,cutting and portioning fresh haddock
Pre-blanching vegetables and pasta
Making homemade tartar sauce
Preparing our homemade steak sauce
Slicing and crushing fresh strawberries for desserts

By the time the first guests arrive, thousands of individual food preparation tasks have already been completed.

The Cleaning Crew

While the kitchen is hard at work, our cleaning crew is tackling an equally impressive job.They prepare a two-level building for hundreds of guests by:

Lifting and placing more than 400 chairs onto tables
Sweeping and mopping dining rooms and public areas
Vacuuming carpets and stairways
Cleaning windows inside and out
Dusting and cleaning light fixtures
Sanitizing washrooms, including 15 toilets, urinals and sinks

And that's not counting the countless kitchen floors, prep areas, sinks, and workstations that also require daily cleaning and sanitizing by our evening Crew.

A Team Effort

By the time the evening team of more than 40 staff members arrives, an enormous amount of work has already been completed.

It takes bakers, prep cooks, cleaners, line cooks, dishwashers, kitchen staff, hosts, bar staff, servers, and managers working together to create the experience our guests enjoy each night. While the dining room may only be open for a few hours, the work that makes it possible lasts all day.

The next time you enjoy a bowl of chowder, a warm roll, a perfectly cooked lobster, or a slice of pie, know that it was prepared by a dedicated team that started long before the first guest walked through the door.

How We Do Things: Keeping Our Lobsters Fresh All Season Long
One of the questions we hear most often is: "How do you have fresh lobster when lobster season is closed?"

The answer is simple — planning, care, and our own on-site lobster pound.

At New Glasgow Lobster Suppers, we maintain our own saltwater lobster holding facility capable of holding up to 20,000 pounds of live lobster. The pound is equipped with a specialized filtration and circulation system that continuously moves and cleans the water, helping keep the lobsters healthy and comfortable.

The cool water temperatures naturally slow the lobsters' metabolism, allowing them to remain in excellent condition while in storage. Think of it as a natural way of helping them conserve energy until they're ready for the supper table.

Coordinated with the highest tides, we perform partial or full water changes using fresh seawater hauled directly from North Rustico Harbour. This helps maintain ideal water quality and closely mimics the lobsters' natural environment.

Every day, our team carefully inspects the tanks for "slacks" — lobsters that have died naturally in storage. Any slacks are removed immediately to protect the health of the remaining lobsters and maintain the quality standards we expect.

Most importantly, our lobsters are never pre-cooked and held for service. Each lobster is cooked to order, ensuring guests enjoy the freshest lobster possible when it arrives at their table.

It's a process that requires daily attention, specialized equipment, and a dedicated team, but it's all part of our commitment to serving the quality lobster experience that guests have enjoyed at New Glasgow Lobster Suppers for nearly 70 years.

The Canada Day celebrations are over, the confetti has settled, and our crew is back at it!

🦞 Good news: We're now open daily until 8:00 PM!

🥵 Also, Mother Nature appears to have mistaken PEI for the tropics this week. While our dining room is cool and comfortable with air conditioning, our kitchen crew will be working somewhere between "warm summer day" and "inside the lobster pot." 🔥

A little patience, a smile, and perhaps a few words of encouragement for our hardworking team are always appreciated during a heat warning.

We can't wait to see you tonight for some lobster, laughs, while you take a break from cooking in your own hot kitchen!
