There's always a bit of hesitation when it comes to cooking something that's truly delicious raw.

Because of my work, I handle fish almost every day - so on my days off, I usually end up cooking meat.
Since moving to this area, even more so, because the local meat here is just so good.

I still remember the first time I tried glass-fed beef when I was in Meadow Creek.
That moment really stuck with me.

This Sunday, I made a beef stew - slowly simmered, taking time with both the meat and the vegetables.

But no matter how much care, time and love you put into making something good...there's no guarantee your kids will like it 😭

Ever heard about Koji? Koji is a tiny but essential part of Japanese food culture. It's what helps creating miso, soy sauce, sake - so many the flavors we love.
The one in the picture is rice Koji, made by growing Koji mold on steam rice.
Koji has a special ability to break down proteins and curbs, and in that process, it draws out deep umami flavors.
Koji is the one of the key ingredient in the fried chicken we served in our November Burger Month, and we use it in our teriyaki chicken on the regular menu as well.
We're excited to bring you even more Koji-inspired dishes. So stay tuned!
