It is with great sadness that I announce that Red Rhino will not be re-opening.

The magical era of the $5 Friday has come to an end and I will miss it terribly.
I will also miss my many regular customers with whom I developed so many friendships.

My high quality kitchen equipment is all for sale, including:

BBQ Season Necessity - Steak Butter:

Steak Butter takes time to make, but is great for topping steaks, chicken, pork chops, roasted potatoes, sausage or white fish.

You need a Dutch oven or a thick-bottomed pot that seals well.

Finely chop four large onions, four bell peppers, two tbsp rosemary, salt and four heads of garlic. Put into your pot on medium heat with a half pound of butter. Simmer covered for about an hour, then add one bottle of dark beer or IPA.
Allow to simmer uncovered for another hour or until no extra liquid appears at the bottom of the pot.
Allow to cool and add minced parsley and/or green onions. Add half a pound of cubed, cold butter and mix thoroughly with a fork or in a mixing bowl.
Place on parchment paper and roll into a tube shape.
Refrigerate and slice into 1/2 inch discs for each serving placed on top of your beautiful barbecued food.

Okay, this one is really easy.

One Shot Rice Pot

You need a large pot with a good thick bottom to make this because you need space for the steam to cook your meal.

Prep: finely chop 1 tbsp each of garlic and ginger; chop raw or cooked chicken, pork or beef and sprinkle with toasted sesame oil; chop chard, bok choi, broccoli, kale and/or any other greens you have.

- Heat your pot to med high, add 1 tbsp of oil and the ginger, garlic, meat and 1 cup of dry white rice.
- Stir regularly for a few minutes until the meat cooks and the rice starts to slightly brown.
- Add 2 cups of stock or water and allow to come to a boil for a few minutes.
- Put the greens on top of the rice mixture, allow to boil for another minute, then turn the heat down to med low and walk away for at least 10-12 minutes or until steam stops coming out of the pot.
- Stir in the greens, plate with your favourite teriyaki sauce, green onion, cilantro, toasted peanuts or cashews.

This makes a nice filling for roasted squash if you want to take that route

Will the real leftover magnet please stand up?

Quesadillas!

You can fill with shredded lettuce and fold into a fajita or you can stack them and bake in the oven to feed more people

Suggested Combinations:
- chicken, peppers & green onion
- steak & mushroom
- bacon & avocado
- ground beef, feta and jalapeƱos
- fried eggplant, onion & garlic

Prep: grate your cheese(s), chop or slice all the meats and vegetables you are using and get sour cream, salsa or guacamole ready

- Put a large frying pan on med high, you do not need to add oil but add some if you want the finished product to be extra crispy
- Put the tortilla on the pan, sprinkle your cheese over the entire surface, then add the other ingredients
- Fold in half when the cheese is melted and slice into triangles. Add condiments on top or use small personal dip bowls
- Repeat this process until your tortilla supply runs out

Although this is kid friendly food, it does go very well with beer.

Emergency Meals, this is a fast one

Cream of Mushroom Soup, (or broccoli or celery or asparagus or chicken)

- in a sauce pot, melt 1/4 pound of butter with some slivered green onions, 9 or 10 chopped mushrooms and salt & pepper
- cook through and add 1/4 cup of flour, mix thoroughly and add a cup of cream or milk
- allow to simmer for a few minutes on medium heat and start adding 1 litre of beef or chicken stock while you keep stirring
- cover the pot and stir your soup every few minutes, adding more stock or cream until reaching the desired thickness
- add Worcestershire sauce, rosemary or a little dark beer to taste and cover on low until you are satisfied with your soup

- once you are prepped with everything in front of you, this soup can easily be done in 10 minutes

- enjoy with crackers and Netflix

Emergency Meals:
Instant Pasta (Almost)

You need your large pot with the thickest bottom.

- boil pasta in salted water, drain in a colander, rinse very quickly with cold water to stop the cooking, then drizzle with olive oil. Toss and leave in colander.
- in the same pot (on med high) put in half a cup of olive oil, 4 chopped garlic cloves, one finely chopped onion and several cups of leftover chopped meat. Chicken, beef, bacon, sausage or just more vegetables (broccoli, asparagus, artichokes) work equally well.
- stir constantly until mixture is browned, then put the pasta back in the pot and mix thoroughly with tongs
- at this point you have even more choices: you can add chopped tomatoes and basil; you can add heavy cream and grated cheese or just toss with a bunch of chopped spinach or chard or kale etc

If you make way too much of this, try putting it in a baking dish and sprinkling (or mounding) it with cheese. If you are worried about it drying out, pour in an inch of V8 juice before baking.

This is a good meal to get the kids involved in, have fun.

People have been asking me how to make meals out of leftovers and limited ingredients, so here is the first easy recipe I am posting. Others will follow soon.

Baked Omelette - made in a pan that can go in your oven such as cast iron

- pan fry (until browned) half a chopped onion, peppers, garlic and/or any other vegetable with cooked ham, bacon, sausage etc
- mix 6 eggs with a half cup of milk or cream and beat with a whisk or fork. Pour over the hot mixture in the pan, heat on the stovetop for another minute, then put in a pre-heated 400 degree oven until the omelette raises and browns on top. Around 10 minutes, keep an eye on it.
- sprinkle on any grated cheeses right away and fresh herbs after plating
- cut into wedges, brag about your famous omelettes to everyone within earshot

Serve with a simple salad and a nice bread.

For obvious reasons, this is the last day Red Rhino will be open for a while. It will also be the last $5.00 Friday.

When we do re-open, the new incarnation of Red Rhino will be a Skip the Dishes business.

Red Rhino has been feeding Nanaimo since 2008 and we look forward to introducing our exciting new delivery menu in the near future.
