We're always looking for new dishes to add to our menu, so today, we're in the test kitchen experimenting with Armstrong Mmmm...Bacon Natural Shredded Cheese to prepare some delicious bacon cheddar scones. These shreds are the perfect combination of cheese and real bacon and it's such a time savour. The moment it's sprinkled into these scones, it packs them with all the cheesy, smoky goodness.
Yield: 1 Dozen
Ingredients:
350g (2 cups) self-rising flour
1 ¼ cup buttermilk, straight from the fridge
150g (generous ¼ stick) butter
100g Armstrong Mmmm...Bacon Natural Shredded Cheese
18g (1 ½ tbsp) sugar
2 tsp baking powder
1 egg
Directions:
Preheat the oven to 450°F.
Grate the butter and freeze it until it is frozen.
Place the buttermilk in the freezer for about 10 minutes or until very cold but not frozen.
Sift the flour, sugar, and baking powder into a large bowl.
Using a fork, lightly cut the frozen butter into the flour until it is pea sized.
Gradually add the buttermilk until the dough is crumbly and gathers into a ball.
Place it on a lightly floured surface and shape it into a rectangle about 1-inch thick.
Fold the dough over itself 5 times. On the 3rd and 5th fold, add the Armstrong Mmmm…Bacon Natural Shredded Cheese. Place the dough in the fridge for 5-10 minutes to re-chill. Fold another 5 times.
Whisk the egg and brush it over the biscuits. Bake for 20 minutes. Checking after 15.
As soon as the biscuits are done, brush them with butter and sprinkle with Maldon salt.
Serve warm with jalapeno jelly, sour cream, scrambled eggs, tomato soup, or maple glaze.
