Som Tum, aussi connu sous le nom de salade de papaye. Bien qu'il existe de nombreuses versions de ce plat, les ingrédients principaux comprennent des tranches fraîches et croquantes de papaye verte, écrasées avec des tomates, du piment, de l’ail et de la sauce de poisson.

Le Som Tum est préparé dans un mortier et pilon en bois, ce qui produit un son distinctif de "pok pok" lorsqu’on écrase les ingrédients ensemble. C’est d’ailleurs pour cette raison que certains appellent ce plat "Pok Pok Salade de Papaye".

Dans la version Issan, le Pla Ra est un ingrédient commun. Ce plat incontournable se décline également en différentes variantes locales dans chaque région du Nord-Est (Issan), avec leurs recettes secrètes et ingrédients uniques comme les graines d'acacia, les nouilles de riz ou encore la pâte de crevettes, entre autres.
