Gooey Pecan Pie Truffle Bombs are the ultimate indulgent bite! 🍫πŸ₯§βœ¨

Total time: 1 hour 10 minutes
Prep time: 1 hour, Cook time: 10 minutes

Ingredients for 20 truffles:
1 cup crushed graham crackers
1/2 tsp ground cinnamon
2 tbsp brown sugar
8 oz cream cheese, softened
1/2 cup pecan halves
1/3 cup corn syrup
1/4 cup brown sugar
1/4 tsp salt
1/2 tsp vanilla extract
10 oz dark chocolate chips
2 tbsp heavy cream
1/4 cup caramel sauce

Step 1/4
1/2 cup pecan halves - 1/3 cup corn syrup - 1/4 cup brown sugar - 1/4 tsp salt - 1/2 tsp vanilla extract.
In a small saucepan over medium heat, combine pecans, corn syrup, brown sugar, and salt. Stir and cook for 5–7 minutes until thickened. Remove from heat, stir in vanilla, and cool completely.

Step 2/4
1 cup crushed graham crackers - 1/2 tsp ground cinnamon - 2 tbsp brown sugar - 8 oz cream cheese.
In a large bowl, mix graham crackers, cinnamon, brown sugar, and cream cheese until smooth. Roll mixture into 1-inch balls, flatten slightly, add a spoonful of pecan filling in the center, and pinch to seal into a ball. Freeze for 30 minutes.

Step 3/4
10 oz dark chocolate chips - 2 tbsp heavy cream.
Melt chocolate chips with heavy cream in a microwave-safe bowl in 30-second bursts, stirring until smooth. Dip each frozen truffle into chocolate to coat fully. Place on parchment-lined tray.

Step 4/4
1/4 cup caramel sauce.
Drizzle caramel sauce over each truffle. Chill for 10 minutes until set, then serve or store chilled.
