Introducing our new series highlighting the feature dishes currently available for dinner, with insights and tasting notes from Chef Kyle.
First up: Pork Belly.
Pork belly is a staple, and the ex*****on is what sets this dish apart. Prepared confit-style, the pork belly is cured, slow-cooked, and pressed to retain its richness before the skin is crisped to perfection. Finished with a sweet and savoury KBBQ glaze, it’s paired with a crisp kimchi pancake and charred sesame bok choy for balance and texture in every bite.
Served alongside the dish are two house-made kimchis: a clean and mild white kimchi, and our bold red kimchi, made entirely vegan without fish sauce or shrimp. And our house KBBQ sauce allows you to tailor the heat and acidity to your liking.
