It was 2012.
Time for a new menu after being named ‘Canadas Best Pizza’.
I ate a delicious Italian Club sandwich in Vancouver and I knew I had to throw those flavours on a pizza dough.
It was love at first bite.
Literally the 4th time I ever made it was in the finals at the World Pizza Games in Vegas where it placed 5th!

Basil pesto, mozzarella, capicola, pancetta, provolone, onions, fresh diced tomatoes, arugula and parmesan, and a swirl of balsamic glaze

We had to have a Hot Nashville pizza… but it was missing something … at the same time, many attempts were made to invent a Jalapeño Popper pizza, but it was missing something ….
