Go grab your coffee bag and check one thing: when was it roasted? ☕️

Most of us look at the best-before date, but the roast date tells you something much more useful about freshness. Once coffee is roasted, its aroma and flavour gradually begin to change.
That’s one reason Rock Paper Coffee is roasted to order in Saskatchewan rather than roasted simply to sit in inventory.

Meet William, CEO & Master Roaster at Rock Paper Coffee. ☕️

From evaluating green coffee to developing roast profiles, monitoring heat, colour, timing, and consistency, William oversees the details behind every batch.

Our coffee is roasted in Saskatchewan on an Italian Officine Vittoria double-drum roaster, then checked for quality and given time to rest before packaging. We roast to order because freshness, consistency, and flavour come before volume.

Those descriptions are tasting notes. What you perceive in the cup is influenced by the coffee itself - including its origin, variety and processing - as well as how it was roasted and brewed.

From Sumatra to Saskatchewan. 🇮🇩➡️🇨🇦

One of the origins behind selected Rock Paper Coffee blends is Sumatra Mandheling, sourced from the Simalungun and Karo Community Cooperative in Indonesia.

Grown at approximately 1,200–1,300 metres, this Ateng coffee is processed using Indonesia’s distinctive wet-hulled method. The result is a coffee with the weight and depth Sumatra is known for: a heavy, creamy body with citrus-herbal character.

Before any coffee reaches our roaster, the lot is cupped by the supplier. When it arrives, we moisture-test and visually inspect it. Our green coffee must fall within a 10–12% moisture range, score approximately 80–84 points on the SCA scale, and come from a harvest within the past year.

Then it reaches Saskatchewan, where we roast in carefully monitored batches using our Italian double-drum roaster.

Different origins bring different strengths. Sumatra brings depth.
& Coffee always wins.
