Honduras Parainema is a vibrant and expressive single origin that highlights the evolving character of modern Honduran coffee. Part of our rotating lineup of standout microlots, this coffee showcases how innovative processing and unique cultivars can create deeply layered and memorable cups.

Produced by Nelin Yovani Guzman Muñoz at Los Zorzales in El Cielito, Santa Bárbara, this lot features the Parainema variety, a cultivar developed in Honduras that has become known for its intensely aromatic and fruit-forward profile. Once considered primarily functional for its disease resistance, Parainema has gained global attention for producing remarkably complex coffees with vivid acidity and floral character.

This coffee undergoes an anaerobic natural process, where whole cherries ferment in a sealed, oxygen-limited environment before drying. The controlled fermentation enhances sweetness, deepens fruit character, and builds a syrupy, wine-like structure in the cup while preserving clarity and balance.

Expect notes of cranberry, grape juice, dark chocolate, and warm spice, supported by a juicy body and a lingering sweetness that carries through every sip. The profile is fruit-driven and complex, yet comforting and approachable, offering a cup that feels both adventurous and familiar.

Colombia Raspberry Co-Ferment is a vibrant, fruit-forward single origin that showcases the full expressive potential of modern coffee processing. It’s part of our Limited Release Black Bag Series - coffees that embrace innovation and explore how far flavour can go when creativity meets precision.

Produced by Edwin Noreña at Finca Campo Hermoso in Quindío, Colombia, this coffee reflects a meticulous, experimental approach to fermentation. Known for pushing boundaries, Edwin combines deep processing knowledge with controlled co-fermentation to unlock entirely new flavour dimensions in the cup.

This lot is a carbonic natural co-ferment, where whole coffee cherries undergo fermentation in an oxygen-limited environment with raspberries introduced during the process. The result is intensely layered and fruit-driven, leaning toward syrupy, macerated character rather than fresh fruit - bold, concentrated, and unmistakably unique.

Expect notes of cherry syrup, strawberry rhubarb jam, and kombucha-like acidity, supported by a juicy sweetness and a lingering, candy-like finish.

El Salvador Cerro Las Ranas is a rich, comforting single origin that highlights the depth and precision of classic honey processing. It's part of our Limited Release Black Bag Series - coffees that push the boundaries and showcase what’s possible when innovation meets intention.

Produced by José Antonio Salaverria and his family at Finca Cerro Las Ranas in Ahuachapán, this coffee reflects generations of care and attention to detail. From meticulous farm management to hands-on quality control, every step is intentional.

This lot is processed as a honey (pulped natural), where the fruit is removed but the sticky mucilage is left on during drying. The result is a cup that balances sweetness and structure, with a smooth, rounded body.

Expect notes of caramel, dark chocolate, and toasted nuts, with subtle raisin-like sweetness throughout.

An approachable, everyday coffee with just enough complexity to keep things interesting.
