Just across the border to the south, Belgium is known for its chocolate, its waffles, its beer and its claim to be the founders of the French Fry/frites. Legend has it that American soldiers stationed with Belgian troops in the Second World War fell in love with the fried potatoes that were frequently made for them in the trenches. Upon returning to America after the war, they mistakenly named them “French fries,” not realizing that the French speaking Belgian soldiers were, in fact, not French! Belgium boasts having the best Frites in the world, however, we tried a lot of them and they just didn’t stand up to the Dutch Frites. Different potato, same technique, but fried in Beef tallow instead of the more flavorful peanut oil. In Bruges we visited the famous Frites Museum which was an interesting history of the potato (Peru), the evolution of deep fryers, and the technique they use to cook them properly, the same technique we adopted when we started this crazy journey over ten years ago! I’ll share that with you later.

So we closed down the shop and hopped on a plane ASAP for a long awaited visit with my Mum in The Netherlands. Here is where the idea for Tin Pan Alley was born 12 years ago, at this tiny hole-in-the-wall Frites shop in central Amsterdam. They make these delicious gems in peanut oil, always golden and crispy on the outside and fluffy and creamy inside and you can choose from twenty odd flavors of Mayo. Pictured here are the Samurai spicy and the tangy garlic sauces. The line wraps around the corner all day long and it moves in waves because they only have the capacity to make and serve so many at a time, and you know they’re doing something right, being in business for over 130 years!!

It’s been a tough decision in the making, folks, but we’ve decided call it quits. Our lease expired at the end of May, and with the current economic climate it’s in our best interest to step back and re-evaluate. With all of the challenging factors involved in operating a food business downtown in these times, once Jill was able to walk me past past my sentimental attachment to TPA, it was a no-brainer. Big thanks to the wonderful staff we have been lucky to have had over the years. Family dinners at work with you will be one of my fondest memories of the day to day. Thanks, also, to the incredible and loyal customers we have been blessed with. We’re going to miss hearing your stories and sharing ours and, of course, feeding you. And thanks to Crombie for working with us through this Pandemic and allowing us to walk away with our dignity in tact. And our wonderful, local suppliers who kept our fridges stocked when we were serving 5 people a day and when we served 100 a day. One of the great takeaways for me, personally, has been the people watching in the food court from my perch in the kitchen. Yes, I’ve been watching you all, and yes, I have some stories to tell. Today is the opening day of The Big Poutine Fest, a chance for you to get out there and try some of the city’s favourite comfort food made by the city’s best. Running today until Feb. 20. We are putting forward our Brisket Poutine, which was our Thursday special from day one, by popular demand, until the Pandemic hit. Home cut fries, slow braised PEI brisket, squeaky Quebec cheese curds, crispy onions, scallions and our delicious homemade-from-scratch gravy. Two dollars from each poutine sold will go to Big Brothers and Sisters. Check out the full list of participating restaurants

We buy our beef exclusively from PEI, and specifically the Tri Tip cut, arguably the tastiest nugget on the cattle. It is grass fed and fattened up with, you guessed it, a potato diet for its final two weeks. This time of year we are always amazed at the rich ruby-garnet red colour of the beef and the generous marbling, due to the long hot monthes of grazing the green grass of summer. Now their diet switches to hay, until spring, and while it is still probably equally tasty, it is never as colorful and delicious to the eye as it is now. Good time to come by for our Steak Frites.

September marks the highly anticipated arrival of newly harvested potatoes, or, as the picture implies, pommes de terre. In Our line of work, it is like winning the lottery. While the old potatoes that we get all year until August are tasty and preferred by some, they are extremely fussy and hard to work with and not very pretty to the eye. This is a white fleshed potato, sweet and creamy, but sadly, they only last until mid October-ish, when the might Russets take over and carry us through u til next September. Get ‘em at your favourite fry shop while you can.

September 12, 2001. The hot dog tasting in the Platinum Club for the execs, scheduled weeks ahead by the new young hotshot Disney-recruited do*****ag Director of Quick Service, went ahead as scheduled, a pretentious blind tasting of corporate hot dogs which went against everything .brad.long had stood long and hard for leading up to this. I stole away from the festivities to the arena where was doing a sound check with his band, walking in on them discussing whether or not to do the show, in light of the previous day’s disaster, and on a dime it was decided to go ahead with it, and I witnessed him teach his band the beat, chord progressions, bass line and back up and harmony vocals to the Rolling Stones’ classic “Gimme Shelter, “ which they opened the show with that night in chilling fashion.

On the morning of 9/11, I hopped on the subway to the Air Canada Centre for work, as usual. I stopped and chatted at the entrance with the 75 year old security guard who was from the old Maple Leaf Gardens, as usual. But there was something unusual about the Platinum Club as I walked down the hall towards it. There were a couple of TVs on above the bar, and the lights weren’t on in the bar and dining room. I figured I forgot to turn the TVs off the night before-unusual - or maybe the cleaners had been watching overnight. I walked in to find the team standing in front of the TVs, silent in the dark. The first tower was on fire and it was still unclear how it was hit and by what. Every now and then, a tears-eyed basketball player would break the deafening silence by phoning a relative, or a friend or an agent. Then we saw the second tower get hit by a plane and we were all in shock as their coach came in and gathered them up, and the arena and every other building in the shadow of the CN Tower, now deemed a high risk target, was evacuated.
