During the Evening of Coffee Tasting at Cortado, guests will be led through a journey of coffee tasting experience as we discuss the sensory analyses together. The world of specialty coffee is vast and complex and is highlighted each year by prestigious auctions and World Coffee Championships. To understand the attributes that give certain coffees high scores, and ultimately extremely high auction prices, we will be ending our evening with a world championship worthy coffee from Panama.

We will be pairing each of the coffee courses with complimenting taste experiences to enhance and further understand the world of specialty coffee.

This is an experiential as well as an educational evening for coffee lovers, and those who want to learn more about the world of artisanal coffees.

We are very excited to add this Sidra to our line up!

Fausto Romo owns the 6-hectare farm Finca Carolina, located close to high altitude capital city of Quito. On his farm, he dedicates 3 hectares entirely to coffee production. The coffee is picked ripe and depulped the same day, then fermented dry for 16 hours. The coffee is washed about five times to remove all the mucilage and dried on rooftop for 15–18 days. The Sidra variety, which is a cross breed mutation of the Red Bourbon and Typica varieties, is said to have originated in Ecuador. Inheriting the crisp acidity from the Typica, and the rich high sweetness and filling body from the Bourdon, this coffee is a well-balanced delight of any brew method!

This coffee comes from the town of Acevedo, nestled in the heart of Southern Huila which is home to some of the best terroir for growing high quality coffee in the entire country of Colombia. This coffee was blended from smaller day lots grown on Finca La Florida by Gilberto Rojas. These smaller lots normally would have been sold locally for incredibly low prices and mixed into large, non-traceable regional blends. By keeping them separate, our importer Apex was able to ensure that Gilberto was paid fairly for his coffees and can highlight more of his hard work of growing coffee. The rich, dark chocolate characteristics are balanced with fresh raspberry and caramel sweetness.
