🍗 This isn't your average grilled chicken. Chicken Inasal is marinated, charcoal-grilled, and basted in annatto butter — and once you try it, plain chicken feels like a step backward.

Chicken Inasal comes from the Visayas region of the Philippines — marinated in calamansi, vinegar, lemongrass, and annatto then grilled over charcoal and basted with garlic-annatto butter. Golden, smoky, and aromatic. Served with garlic rice.

There are two steps to making Lechon Kawali right: slow-simmer the pork belly until the meat is tender, then deep-fry it until the skin blisters into a crackling that shatters on contact.

At Barrios, we don't skip either step. The result is crispy pork belly served with soya sauce with tangy vinegar dip — the way it's done in Filipino homes across the Philippines. One of the most popular dishes we serve, and one of the hardest to find anywhere else in Halifax.
