I've been inspired by God to make this jam! It's like before, but with some changes that really bring out the yum! I had a friend help me pick up some jars that I can reuse! For anyone wondering, the new kombucha method works, it's just that there's no pretty instagram photo for it lol. The SCOBY ended up being fluffy and you can make fluffy pancakes out of pieces of it! The slower method makes translucent kombucha, this quicker method makes opaque kombucha. It looks like milky tea. The flavour is still tart, sweet, and aromatic (it has the aroma of orange pekoe, the tea I used to make it) and the mouthfeel is still bubbly. It's just as healthy, full of probiotics, a balance of beneficial bacteria and yeast for your gut!

Drop by for some readily made fluffy SCOBY, you can buy a large 1.50$.

You can also buy some SCOBY pancakes. 1$ Small. 1.50$ Medium. 2$ Large.

Toppings are 50 cents extra. Current selection as of this writing includes peanut butter, peaches, jaggery, and fermented vanilla chai protein sauce. More will be added. Can change depending on season and availability of ingredients.

The kombucha is 5$ per 1400ml. You can have more or less and it will be priced accordingly.

You need to bring your own containers.

You can pick up at 368 Saint Margeret's Bay Road. I can deliver to your place, text me your address. For delivery, the toppings would be separate. Delivery fee is at least 1$ or more if it's far enough.

Yup, passes the drip test! A new jam has been born! I left the pulp in this time. Turns out it contains pectin! (Or maybe I added enough sugar, gonna have to run some more tests to be sure) Definitely helps to thicken it up! As you can see, it has a zucchini colour. The flavour is absolutely out of this world! Better than the jelly I made in the previous post! It has a little tartness comparableto the tartness of a grape, it's sweetness levels is at maple syrup, a little bit savoury equal to the savourylevel of a raw white button mushroom. It reminds me of the smell of the banana leaves used to wrap rice into tight buns before boiling. The jam consistency helps the flavor to slowly move on your tongue, making it easier to savour the flavour! The little pieces of boiled, shredded leaves are surrounded by soft sugar crystals so that
gives it a subtle crispy texture comparable to fried phyllo sheet crumbs. My words don't do it justice, you have to experience it yourself!

An entire jam jar is going for 10$ (portions or multiples priced accordingly).

I'm discontinuing the jelly from the previous post until I get my hands on some more agar agar due to health concerns of the jelly containing too much sugar. I don't want to hurt any of you, because I love you all! Don't worry, it won't go to waste. I can use it to make JKLade (like lemonade, but with JKL [Stands for Japanese knotweed leaves) or any other recipes. JKLade (Or as I prefer to call it, "Jackolade") just looks like the juice in an earlier post, except it's sweeter. It's a smooth, satisfying drink. Neon green in colour (shake before serving/drinking). The raw beverage is an excellent source of vitamin C!
