Receiving the Sello M means much more than displaying a recognition on the wall: it means taking on the responsibility of representing Mexican cuisine beyond our borders.
This distinction is awarded jointly by the Mexican Academy of Gastronomy and Mexico’s Ministry of Foreign Affairs, through Mexico’s embassies and consulates. Obtaining it requires an assessment of ingredients, techniques, preparation methods, and the training or experience of those leading the kitchen. The process is documented through photographs and videos and includes verification visits and tastings by representatives, as part of the evaluation coordinated with the Mexican Academy of Gastronomy.
This distinction helps identify restaurants that preserve authentic Mexican cuisine and allows diners to distinguish it from Tex-Mex or Cal-Mex offerings. Mexican cuisine is incredibly diverse: each state has its own flavours, ingredients and traditions. At Sinalove, we represent the cuisine of Sinaloa.
In 2010, UNESCO inscribed traditional Mexican cuisine on the Representative List of the Intangible Cultural Heritage of Humanity, recognizing the knowledge and practices passed down through generations.
For our chef, Joel Romero, and his entire kitchen team, receiving the Sello M is a source of pride and a daily commitment: to maintain quality and honour our roots, along with the methods and recipes passed down from generation to generation. Through the flavours of Sinaloa, we share our culture.
