👩🌾💖🌿 This weekend’s cocktail feature is called the Labour of Love 🌿💖👩🌾
This beauty is completely tipsy on pure garden alchemy, swirling Gin, Lillet Blanc, and Dry Vermouth with a scratch-made Angelica syrup that took some serious behind-the-scenes stamina.
When we say Labour of Love, we mean this drink went through a total botanical boot camp before hitting the bar. The fresh Angelica was harvested straight from our restaurant garden, , and the leaves were stripped and saved (keep an eye out for those transforming into housemade bitters down the road). Then came the real workout with the stalks: chopped into 4-inch pieces, blanched, shocked in an ice bath, and hand-stripped of every last bit of that stringy business.
From there, they were chopped smaller and simmered into a rich simple syrup to infuse overnight, brought to a boil again the next day, and infused another day before it was strained. To finish it off with a little extra ✨ sparkle✨ , those leftover sweet pieces were tossed in castor sugar and dehydrated into the gorgeous, candied jewels garnishing the glass.
