Roasted Eggplant & Zucchini, just the way my mom has been making them for as long as I can remember. 🤍
No fancy ingredients, no complicated steps. Just simple, fresh flavours that never get old.
✨ BBQ the eggplant and zucchini with no seasoning. Once they’re cooked, toss them with:
• Extra virgin olive oil
• Salt
• Fresh garlic (or garlic powder)
• A splash of white balsamic vinegar
• Fresh mint
They keep beautifully in the fridge for 2–3 days, so make a big batch and enjoy them as an easy side all week. They’re perfect alongside grilled meats, fish, or tucked into a sandwich.
Sometimes the simplest recipes are the ones that become family traditions. 💚

Back to reality! 🇮🇹✨
One thing I loved about Europe was that breakfast almost always started with infused water before the meal. It wasn’t just coffee and a croissant/cornetto. it was a simple ritual that encouraged hydration first.
Throughout our trip we enjoyed ginger shots, lemon water, lemon and ginger water, and refreshing fennel and mint-infused water. It was such a great reminder that small habits can make a big difference and that nourishing your body doesn’t have to be complicated.
I’m definitely bringing this tradition home. 💛
