Cuvee Name: La Toine
Vintage: 2021
Region: Côtes Catalanes
Grape(s): Carignan 
Winemaking: spontaneous fermentation with indigenous yeasts, and aged in stainless steel for 10 months. Bottles unfined and unfiltered. 
Tasting Notes: Wild and tart raspberry, blackberry and black cherry, pepper, and that rustic ‘barnyard’ wet hay kind of funk. Elevated and crunchy acid, softer tannins.
Other Notes: 70 year old vines of Carignan!
Pairings: roast pork, tartare, burgers, steak.
