Saturday night before Father's Day. Longest day of the year — sun is up until almost ten in Edmonton, and our patio's catching it.

The bar is open from 5. Cocktails on the list this week were built for the kind of evening that turns into night without you noticing. If you stop in early, you get the bar to yourself for an hour. If you stop in later, you get the room.

A good bottle is half the story. We pulled this one from the cellar for tonight.

Workshop's wine list is small on purpose. We pour what we'd drink ourselves — bottles that pair with the menu we're cooking, not the menu we used to cook. There are wines that stay on the list for years. There are wines that hit the list because a producer changed their fall release and we said yes.

If you've got a dish in mind for tonight, ask your server to point you at the right pour. That's what they're there for.
