一杯珍奶的誕生，看起來容易卻也不是這麼容易。這是台灣人從小喝到大的口味，也是街知巷聞的經典，即使能猜測他是如何組成，最難的關是如何調出自己真心喜歡，覺得無可挑剔、喝了還會想再喝的味道。如果味道還沒到自己真正的喜歡的程度，也就很難期待客人喝到這杯珍奶會有什麼正面回饋。所以出現在菜單上的品項都像自己的孩子，都是愛不釋手的真心誠意之作，能感動自己，也能感動品嚐的每個人。

每樣食材都在等待著最合適的料理方式，每道菜也都有屬於他的故事。

在製作照燒雞的時候，等待是一個很大的學問，在神秘醬汁中翻滾與收汁，直到出現撲鼻的微焦醬香味，同時也是醬汁收乾的邊緣，不早不晚的起鍋，就會誕生一道無比下飯的照燒雞，搭配炒飯真是好吃的沒話說。

每當我們進行上面的步驟，心裡不自覺響起有DoReMiSo的音樂，一道受歡迎的料理就此誕生。有趣的是照燒雞炒飯不只亞洲人愛吃，也有歐美人和墨西哥人對他情有獨鍾，已經成為這間店的招牌菜之一。

來一份照燒雞炒飯，黑白相間的組合將會給你很不一樣的用餐體驗，那些爆炸性的想法說不定會由此誕生！

When we make teriyaki chicken, patience is everything. The chicken rolls gently in our secret sauce as it slowly reduces, until that irresistible aroma of lightly caramelized sauce fills the air—right at the edge of perfection. Not a moment too early, not a second too late. Lift it from the pan at just the right time, and you get a teriyaki chicken so comforting and flavorful that it pairs unbelievably well with fried rice.

As we go through these steps, a Do-Re-Mi-So melody often plays in our minds—a sign that a beloved dish is coming to life. 人無論去了多遠的地方，都還是會想跟自己的家鄉有一點連結，而回憶台灣味道的方式如此簡單，一口冬瓜茶，ㄧ份淋上肉燥的燙青菜，光是看到這兩個東西，那種笑容都是隱藏不了的😊😊來到異鄉生活，身上或多或少帶著闖蕩的故事，願這份燙青菜不只讓飲食更均衡，也成為你心中的溫暖吧🔥

Right before closing, a small group of customers came in and ordered just two things: Taiwanese Blanched Greens and Taiwan Winter Melon Tea—nothing else.
It made me wonder if they were looking for a taste of home.

Around the world, you won’t often see a dish where vegetables are simply blanched and topped with a savory sauce. And if that sauce happens to be Taiwanese minced pork, then it’s unmistakably a symbol of home.

No matter how far we go, people always crave a connection to where they come from. And sometimes, remembering the taste of Taiwan is as simple as this—
a sip of winter melon tea,
a plate of blanched greens with minced pork on top.

Just seeing these two items can bring out a smile that can’t be hidden. 😊😊

牛肉麵的誕生是一段需要等待的過程，如果耐不住性子，也就無法煮出如此迷人的香氣。

每天在店裡熬煮牛肉湯的時候，就會吸引其他廚師們停下腳步，用那種亮晶晶的眼神看過來。我非常明白，當你目睹製作過程，真的馬上想嚐一口🤤🤤

來到溫哥華之後，我們深刻感受到台灣人司空見慣的牛肉麵，在這異鄉真的是很具有代表性的台灣料理。牛油與大骨堆疊的深層滋味，經過慢火來層層釋放；蔬菜熬煮出自然鮮甜，添加幾分柔和的層次，完美融合之後入口的瞬間，會帶來一種直擊靈魂的感受，不只暖在心裡，也在回憶裡…這就是一個和時間與沉澱高度相關的料理，即便我們誕生在牛肉麵的國度，也是吃了還想再吃。

十二月的溫哥華小有寒意（跟其他下雪的地方比起來😆），3-4度的低溫時不時配上雨的背景，就特別容易讓人想家。想家的時候來找我們吃碗熱騰騰的牛肉麵吧，這是會讓你吃完之後想撥通家人電話的，家鄉的好滋味🍜

The birth of a bowl of beef noodle soup is a process that takes time—and without patience, you simply can’t create a fragrance this irresistible.

Every day when we simmer our beef broth in the shop, the aroma drifts out and makes other chefs stop in their tracks, staring with those bright, hungry eyes. And I get it—once you witness the whole process, you can’t help but want a taste right away 🤤🤤.

After moving to Vancouver, we truly realized how this everyday Taiwanese staple becomes a deeply representative dish of home when you’re abroad. The rich flavors built from beef fat and bone marrow slowly unfold through long, gentle simmering; vegetables add a natural sweetness and a soft, layered warmth. When everything finally comes together, that first sip of the broth hits you straight in the soul. It warms more than just your stomach—it’s a warmth that reaches into your memories. Even for those of us who grew up surrounded by beef noodle shops, it’s a dish you never get tired of.

December in Vancouver carries its own kind of chill (mild compared to snowy cities, we know 😆). The 3–4°C weather, especially when paired with the sound of rain, makes it easy to feel a little homesick. And when you do, come have a hot bowl of our beef noodle soup. It’s the kind of comfort that makes you want to call your family after you finish—a true taste of home. 🍜
