🧀 Giancarlo’s Star of the Week — Pecorino Canestrato
A true taste of Southern Italy, Pecorino Canestrato is a traditional hard sheep’s-milk cheese with a firm, crumbly texture and a rich, savoury flavour. Canestrato is especially associated with Sicily and Puglia, with traditional varieties made throughout Southern Italy.
Its name comes from the traditional “canestro” is a woven basket used to shape the cheese, leaving its characteristic texture on the rind.
How to enjoy it:
🧀 Slice it for a charcuterie or cheese board
🍷 Pair it with a glass of Italian red w**e
🫒 Serve with olives, fresh bread and extra-virgin olive oil
🍝 Grate it over pasta, risotto or roasted vegetables
