Chefs Tracy Little’s offerings reflect her love the mountains, of food and foraging. They incorporate this into everything they do with a focus on sustainability and craftsmanship. BREAKING: .yyc is coming to Canmore!

Francine’s is a French bar coming to Calgary in summer 2025, founded by Chef Garrett Martin and Bar Manager Nathan Wry. The cuisine embraces a European-style tavern aesthetic with classic French refinement, while the drinks celebrate old-world, spirit-forward cocktail culture with creative touches.

Francine’s began as a pop-up in January 2024, earning consistent praise and critical acclaim throughout its five-month tenure. Garrett and Nathan are now in the process of building a brick-and-mortar location for the concept.

For two nights at Sauvage, expect the wild, locavore, Western Canadian cooking that Chef Tracy is known for, seamlessly integrated with Chef Garrett’s punchy, innovative, French-accented fare.
