NEW EPI PRODUCTION LAB- Part 3

This here is our therapy space for our OCD (obsessive croissant disorder) issues. We just can't help but laminating sheets of dough and sheets of butter together, and since it looks like no one wants us to heal, we've taken the matter (and the rolling pin) into our own hands.
As we say in France, " a croissant a day keeps the doct- well, not really but it definitely helps make life butter. I mean better.

NEW EPIC PROD LAB - Part 2

When its Epi sourdough bread time, there is a few things required: good grain, knowledgeable bakers, some patience and a good environment for the well being of "Happy" (our sourdough starter- fed twice daily!)

When making sure all these requirements are met, the result is more than making nourishing bread to feed our community...
it is like an ancestral magic happening in front of us, the grains growing in the prairies' soil all summer long becoming a nutritious flour, which after adding water and salt to it, and a slow fermentation process, finally becomes a flavourful loaf nourishing our bodies and souls...

NEW EPI PROD LAB -PART 1

Behind the scenes of planning/building a commercial food production space...

Many (many!) challenges along the way when starting with an empty bay, but also the ability to plan/build a meaningful space tailored to our vision/needs...so we made it work - with the help of the great team at and professional local Canmore trades.

The space is new, but our belief remain the same: local food matters, and how it's made matters. We do this work because real food, made slowly and intentionally, nourishes people in ways shortcuts never can.
