The tradition of "Al Funghetto" is a classic bit of Italian kitchen magic. Despite the name, it has nothing to do with mushrooms; it is actually a traditional way of slow-cooking eggplant until it turns dark, tender, and savory enough to capture that same earthy, deep richness.

We make ours by stewing the eggplant until it is perfectly velvety, then finishing it with a crumble of tangy goat cheese and a side of crispy, oil-drizzled crostini.
