Laap G*i (Chicken Laab)
Thinly sliced oven chicken and gizzards tossed in our housemade sauce, roasted rice powder, fish sauce, fresh mint, fresh cilantro, fresh chili peppers, and seasoning.
Laap comes in many variations across Laos, each tied to a different region and tradition. Pork is historically the most common version, largely because beef was harder to come by and more expensive to raise. Duck and chicken Laab comes in second most common. Other variations of Laab are duck, fish, eggplant, and mushroom!
Chicken Laab holds a special place for us. It's the version we grew up eating at family gatherings, and it's our version we want to show you.
Best enjoyed with sticky rice and a side of papaya salad or wrapped with lettuce.
