Raspberry-Blueberry Cake 😍

Ingredients: 2 cups (250g) of flour, 2 eggs, 1 cup (200 g) of granulated sugar, 1 cup (230 ml) of sour cream, 1/2 cup (120 ml) of sunflower oil, 2 packets of vanilla sugar (2x9 g), zest of a lemon, 3 tablespoons of lemon juice, 1 teaspoon of baking powder, 2 pinches of salt, 10 ounces (300 g) of mixed berries mixed with 1 tablespoon of flour

This is a very easy recipe that everybody can do. The cake is soft and moist and filled with lots of berries, it is a perfect dessert with a cup of coffee.

Beat the eggs with the sugar until it doubles in volume and turns creamy and light in color. It takes 3-4 minutes of continuous beating. Add the sour cream, oil, vanilla sugar, salt, baking powder, lemon juice and the lemon zest. Combine the ingredients well.
Sprinkle flour in batches and gently stir the batter until lump-free. Pour half of the batter into a lined baking pan (7×12 inches) and add half of the berries that were previously mixed with flour. Spoon over the other half of the batter and top with the remaining fruits.
Bake it in a preheated 375 F oven until the top does not jiggle anymore and has a light golden brown color. It takes approximately 45-50-minutes of baking.
