The Story of Mama’s Pizza
A brief biopic of our struggle to be the best pizza in Cayo
We came to Cayo from the New Jersey/Philadelphia area of the north-east US, where the ability to make a good pizza practically comes with your birth certificate. The rules are different here in Belize, however, with regard to so many things (but we won’t get into all that here), including the climate. Breads, pastries and dough of all kinds work completely differently with the heat and high humidity of the region, so we experimented. For a solid year we tried one solution after another, and after each attempt, we would look at each other and say, “It’s pretty good …but if (fill in the blank) was just a little better, it would be perfect!”
When we finally got the dough recipe nailed; perfect crispy crunchy crust, yet a nice chewy consistency, combined with the best flavor, we started hosting pizza parties. First we invited our Belizean friends. We made pizza all day long. We used their favorite toppings, the kids made their own pizza pies, and every crumb was devoured. Success!!
Next, we invited the Americans, people who know pizza and would be our biggest critics. Again, every crumb was devoured and the dough and sauce recipes were requested by everyone.
Pizza, made from all natural ingredients, combined with the love and passion that we have for our pies and for people, makes Mama’s Pizza a healthy and wholesome choice, day or night, warm or even cold the next day.
