From Tokyo’s ramen sanctuary to a bowl in Brussels 🍜✨

Chef Nobutomo Ishii once worked in fashion — until ramen pulled him back. He trained at Higashi Ikebukuro Taishoken, Tokyo’s legendary “sacred place of ramen,” then opened two restaurants in Shizuoka, ranked #1 in the prefecture two years running (2019–2020).

Then he dreamed bigger. In 2020, he brought his craft to Brussels — opening Ramen NOBU, blending authentic Japanese technique with Belgian ingredients.

In 2023, he made history as the first ramen chef in the world to join the French Culinary Academy.
