De zon zakt boven de velden, terwijl een schip over de kreefteputten vaart en verse langoustines vangt. Deze delicatesse, ook wel ‘gatjes’ genoemd, komt tot leven in een heldere consomé van hun koppen, verrijkt met vervaine voor een frisse toets.

Gekarameliseerde uien voegen een subtiele zoetheid toe, terwijl een lak van biet en Schaarbeekse krieken diepgang biedt. De romige crème van de koppen zorgt voor een luxe, volle smaak die perfect samengaat met de krokante geroosterde zonnebloempitten.

Dit gerecht is een ode aan de Noordzee, waar elke hap een harmonie van smaken en texturen biedt, een ware feest voor de zintuigen.

As the sun sets over the fields, a fishing vessel glides across the lobster ponds, hauling in fresh langoustines. Known locally as “gatjes,” this delicacy comes to life in a clear consommé made from their heads, infused with verbena for a refreshing aromatic touch.

Caramelized onions bring a subtle sweetness, while a glaze of beetroot and Schaarbeek cherries adds depth and complexity. A rich cream made from the langoustine heads lends a luxurious, full-bodied flavor, perfectly complemented by the crunch of roasted sunflower seeds.

This dish is a tribute to the North Sea, where every bite offers a harmonious interplay of flavors and textures—a true feast for the senses.

In these luminous spring days, we wander slowly through nature’s quiet generosity.
The elderflower blooms only for a fleeting moment — delicate, fragrant, alive with the season itself.

Here, gathered by hand, it finds its way into our latest compositions: bringing freshness, softness, and the perfume of early summer to the plate.
And because beauty this fleeting deserves to linger a little longer, part of the harvest will rest in vinegar — preserved carefully for the months when nature no longer offers its blossoms so freely.
