Dry ageing.
In Tatemado gebruiken we verse Noordzeevis.
Klinkt vanzelfsprekend; we liggen op een boogscheut van het strand en de haven, waar nog steeds een actieve visserij bestaat. En toch gaan we die vis nog even laten liggen. Niet zomaar, maar wel omdat we onze vis dry agen.
Dat is het gecontroleerd laten rijpen van vis; de vis verliest vocht, krijgt een stevigere textuur en meer diepgang in de smaak.
En daarover gaat het toch?

Dry aging.
At Tatemado, we use fresh North Sea fish.
It sounds obvious; we’re just a stone’s throw from the beach and the harbor, where fishing is still an active industry. And yet, we’re going to let that fish rest for a while. Not just for the sake of it, but because we dry-age our fish.
This involves the controlled aging of fish; the fish loses moisture, develops a firmer texture, and gains more depth of flavor.
And isn’t that what it’s all about?
