Hot peppers…

Love it or hate it.

My last “harvest » are Kenian Peppers from the Kisumu region. Hot, but full of flavour! And they are hot! 🥵🥵🥵

Grown, here in Belgium, with our cold and wet climate, it is not easy, but doable!

Next year we will have some different spicy chili-sauces, pili-pili’s, a variety of hot-sauces, some sriracha’s, red mixes dried flakes, smoked red mixed flakes, and so much more!

Just beginning, but getting there…

What about making our own fermented hot sauces, sambals and pili-pili’s?

I started last december with planting some Carolina Reapers, Habanero’s, Trinidad Scorpions, Thai Dragons and Savina Habanero’s.

That was a great succes!!!

63 plants were growing even in this wet and cold climate we have here in Belgium.

Every plant had around 25 peppers.

So, now what?

Reading in, on sambals, pili-pili’s and fermented hotsauces.

We are getting there.
Some sauces started fermenting.
4 sambals made.
Standard sambal, a pineapple sambal, a garlic-dill sambal and a mediteranian sambal.

Other hot peppers will be dried in a Weber pellet-smoker, others just dried for flakes and some others will just go in the freezer for future use.

But very happy with the results being a beginner.
