We’ve been rather quiet over the past few weeks.
Not because there’s nothing to say — quite the opposite.
We’re witnessing what feels like a major shift, and an acceleration, in what we call climate change.
There’s nothing fundamentally new here. It’s simply the increasingly tangible reality of what scientists have been telling us, over and over, for years.
So we took some time to reflect. To let it sink in. And to question where we, as an organization, should begin — and where we can actually make a difference.
Is running a restaurant the best way to showcase the value of preserving our soils, foraging locally, and growing food with greater respect for ecosystems?
Is serving plant-based food that is tasty, creative and healthy enough to open even a tiny door in people’s minds — and spark curiosity about why protecting biodiversity matters?
Are we reaching beyond those who already agree with us?
Or, sometimes, are we simply talking to ourselves?
We don’t pretend to have the answers. And we’d genuinely love to hear yours.
What makes you care? What makes you want to act? And where do you think change really begins?

It’s by helping people reconnect with the beauty of the natural world around them.
